Abstract: The experimental course of cooking specialty has strong application and practice. Baked food processing technology experimental course plays an important role in mastering the basic theory, basic knowledge and basic skills of baking food production. For a long time, there are some problems in the development of experimental teaching, such as the simple purpose of the experiment; Insufficient combination of theory and practice in experimental design; The analysis of experimental results is not comprehensive, which affects the learning effect of the course. This paper analyzes the existing problems and causes, and designs the experimental design of Puff production as an example.
